Sweetmore Bakeries Acquires Fantasy Baking Co. to Expand Premium Baked Goods Portfolio

Sweetmore Bakeries, a Chicago-based family of specialty bakeries serving retail in-store bakery and foodservice customers nationwide, has expanded its manufacturing network through the acquisition of Fantasy Baking Co., a leading producer of private-label and branded sweet baked products. The transaction strengthens Sweetmore’s position in several high-demand bakery categories while giving the company its first manufacturing location on the West Coast.

Headquartered in Chicago, Sweetmore Bakeries has been steadily building a diversified network of specialty bakery operations designed to serve customers across the United States. With the addition of Fantasy Baking, the company now operates six facilities spanning the Northeast, Midwest, Southeast, Southwest, and West. The acquisition represents an important step in Sweetmore’s broader strategy to establish a coast-to-coast manufacturing platform focused on premium sweet baked goods.

Fantasy Baking is recognized for its expertise in producing a broad range of sweet baked products, including cookies, fruit-filled bars, and dessert bars. Its portfolio also extends into protein and breakfast bars, dry blends, and ingredients and inclusions designed for ice cream applications. This broad product capability gives Sweetmore additional opportunities to address changing consumer preferences and the evolving needs of retail and foodservice customers.

The acquisition follows Sweetmore Bakeries’ 2025 recapitalization with Shore Capital and adds further scale to the company’s growing bakery platform. By bringing Fantasy Baking into its organization, Sweetmore gains not only additional manufacturing capacity but also deeper technical expertise in cookies, baked bars, and specialized product development.

Founded in 1979, Fantasy Baking has built more than four decades of experience in product formulation and bakery manufacturing. The company is headquartered in Sylmar, California, positioning its operations strategically to support Sweetmore’s expansion throughout the Western United States and complement the company’s existing geographic footprint.

One of Fantasy Baking’s key strengths is its in-house research and development laboratory. The R&D operation supports product formulation and innovation, allowing the company to work closely with customers on new concepts and customized bakery solutions. This capability is expected to complement Sweetmore’s existing manufacturing resources as the combined business seeks to develop products that respond to emerging trends in snacking and better-for-you foods.

Fantasy Baking also brings experience with products formulated around a variety of consumer and dietary preferences. Its capabilities include organic, high-protein, non-GMO, gluten-free, and Kosher recipes and solutions. These offerings align with broader shifts in the food industry, where consumers are increasingly seeking products that combine convenience and indulgence with nutritional, dietary, and functional attributes.

The company’s expertise in protein and breakfast bars is particularly relevant as consumers continue to look for convenient snacks that fit increasingly active lifestyles. Meanwhile, its capabilities in fruit-filled bars, cookies, dessert bars, and ice cream ingredients provide opportunities across multiple categories and consumption occasions.

For Sweetmore, the acquisition is therefore about more than geographic expansion. Fantasy Baking adds specialized capabilities that can broaden the company’s product portfolio and improve its ability to provide customers with bakery solutions from multiple locations. The West Coast presence also gives Sweetmore an opportunity to strengthen relationships with customers in the region while creating a more balanced national manufacturing network.

“Fantasy Baking gives us a true West Coast manufacturing footprint and deeper category capabilities that strengthen our ability to serve customers’ various product needs nationwide,” said David Veenstra, Chief Executive Officer of Sweetmore Bakeries. “Between their R&D bench strength and their reach into better-for-you trends, this addition makes Sweetmore an even stronger strategic national partner.”

The transaction also brings Fantasy Baking into an expanding family of specialty bakery businesses under Sweetmore Bakeries. Fantasy now joins Main Street Gourmet, Biscotti Brothers, Azteca Bakeries, Meurer Brothers, and Sweet Eddie’s as part of the Sweetmore platform.

The combination is expected to create opportunities for collaboration across the businesses while allowing each operation to contribute its individual expertise. Sweetmore’s strategy centers on bringing together specialized bakery manufacturers with complementary capabilities, enabling the broader organization to serve customers across a wide range of sweet baked product categories.

Russ Case, Chief Executive Officer of Fantasy Baking, emphasized the importance of maintaining the company’s customer-focused culture as it becomes part of Sweetmore.

“For over 45 years, the Fantasy Baking team has built our business on doing right by our customers – innovation, quality, and service our partners can rely on,” Case said. “Joining a like-minded partner like Sweetmore allows us to continue this tradition while providing access to scale and resources that will enable Fantasy to serve a broader audience and expand its capabilities.”

The acquisition could also support additional innovation as Sweetmore combines Fantasy Baking’s formulation capabilities with the resources and market reach of its broader bakery network. For customers, this expanded platform may provide access to a wider range of products, manufacturing capabilities, and development expertise.

The deal reflects continued activity in the specialty bakery sector as manufacturers seek greater scale while responding to evolving consumer demand. Categories such as cookies, dessert bars, protein snacks, and better-for-you baked products continue to provide opportunities for manufacturers capable of balancing indulgence, convenience, and specialized nutritional attributes.

With six facilities now positioned across major U.S. regions, Sweetmore Bakeries is taking another step toward becoming a national partner for specialty sweet baked goods. The addition of Fantasy Baking gives the company a stronger West Coast presence, expands its technical and formulation capabilities, and reinforces its focus on serving customers across retail in-store bakery and foodservice channels.

As the combined organization moves forward, the acquisition is positioned to support Sweetmore’s long-term growth strategy while preserving Fantasy Baking’s emphasis on innovation, quality, and customer service. The transaction further establishes Sweetmore as a growing force in the U.S. specialty bakery market and expands its ability to deliver premium sweet baked products nationwide.
