Around the World with Beef: Discover a Fresh Ranch-to-Table Experience

The California Beef Council (CBC) recently brought together food and culinary social media influencers for a unique ranch-to-table experience in San Diego County, combining an educational visit to a working cattle ranch with an exclusive sunset dining event. The Ranch & Restaurant Pop-Up showcased California’s beef industry, sustainable ranching practices, and the versatility of beef through globally inspired recipes prepared by San Diego food blogger, cookbook author, and on-camera host Whitney Bond.

The event welcomed 17 food and culinary content creators, ranging from major influencers with more than 500,000 followers to creators with highly engaged audiences numbering in the tens of thousands. Together, the participants represented a combined Instagram following of approximately 37 million, offering an opportunity to introduce a broad digital audience to California’s cattle ranching community and the journey of beef from the ranch to the dining table.

The experience was made possible with funding support from the California Cattle Council and was designed to connect food influencers directly with ranchers and beef producers.

“These types of events are an opportunity for the CBC to provide a first-hand experience to both our food influencer partners and some of our California ranchers, and the Pop-Up would not have been possible this year without the funding support from the California Cattle Council,” said Christie Van Egmond, the CBC’s Director of Retail & Foodservice Marketing. She added that the combined social media reach of the participants could allow millions of followers to experience the event through the creators’ content.

Discovering California’s Cattle Ranching Industry

The day began at the San Diego Mission Bay Resort, where the participating influencers boarded a bus for the journey to Flying ‘F’ Ranch in San Diego County. The ranch is operated by Alli and Bryce Fender and provided guests with an opportunity to explore cattle ranching firsthand.

For many attendees, discovering that an active cattle ranch operates near the urban areas of San Diego was one of the day’s biggest surprises. The visit highlighted the close relationship between California’s agricultural communities and its cities, demonstrating how farming and ranching remain important parts of the state’s economy and food system.

According to Van Egmond, events like the Ranch & Restaurant Pop-Up help communicate the importance of agriculture throughout California. Although many consumers live in urban environments, agricultural operations are often located within a relatively short distance of major population centers.

The event also encouraged conversations between people who play different roles in the food supply chain. By bringing together digital content creators and cattle ranchers, the CBC aimed to build a stronger understanding of where beef comes from and the people responsible for raising it.

At Flying ‘F’ Ranch, Alli and Bryce Fender guided the guests around the property, introducing them to the cattle herd and showing them cows with their newborn calves. The ranch visit provided a closer look at cattle care and the practical decisions involved in managing a working ranch.

Participants also learned about the ranch’s use of virtual fencing technology. The cattle wear collars that help ranchers track and manage the herd, offering an example of how technology can support livestock management and modern agricultural operations.

The demonstration gave influencers a chance to understand how ranchers combine traditional livestock-raising knowledge with newer tools to manage their animals and operations.

Sustainable Ranching Through Agricultural Byproducts

Sustainability was another important theme of the visit. One of the demonstrations focused on how Flying ‘F’ Ranch makes use of spent brewer’s grain from Viewpoint Brewing Company.

Spent brewer’s grain is a byproduct of beer production that can be repurposed as a nutritious feed ingredient for cattle. Instead of sending the material to a landfill, Viewpoint Brewing Company supplies the grain to the ranch, where Alli Fender incorporates it into the herd’s feeding program.

The arrangement creates benefits for both businesses. The brewery has a productive outlet for a byproduct of its brewing process, while the ranch receives an additional feed resource for its cattle. The practice also helps reduce the amount of material that would otherwise require disposal.

Van Egmond described the relationship between Flying ‘F’ Ranch and Viewpoint Brewing Company as a mutually beneficial partnership that illustrates an important aspect of sustainability in cattle ranching.

Agricultural byproducts can be valuable resources when they are suitable for animal feed and managed appropriately. Depending on the location of a ranch and the agricultural industries operating nearby, cattle may receive other food-processing byproducts, including almond hulls, citrus peels, and cotton seeds.

These practices demonstrate how livestock operations can contribute to more efficient resource use by turning certain materials from other industries into useful agricultural inputs.

For the influencers, the ranch visit provided real-world examples of how beef production connects with other sectors, including brewing and crop agriculture. It also offered a broader perspective on sustainability beyond the finished food products consumers encounter in restaurants and grocery stores.

Sunset Dining Showcases Six Global Beef Recipes

Following several hours at Flying ‘F’ Ranch, the group returned to San Diego for the second part of the event: a sunset dining experience at Whitney Bond’s home overlooking Mission Bay.

Bond developed six original beef recipes inspired by international cuisines. Each dish was paired with a beer or wine selected to complement its flavors, creating a menu that highlighted the versatility of beef across different culinary traditions.

The menu featured the following dishes and beverage pairings:

  • Mexico: Smoked Beef Cheek Barbacoa Tacos, paired with Viewpoint Brewing Cheep Skate American Lager.
  • Turkey: Grilled Skirt Steak Shawarma Salad, paired with Ténèbres G.S.M.
  • Spain: Andalusian Braised Oxtail Paella, paired with Viewpoint Brewing Darth Lager.
  • Korea: Korean Beef Bulgogi Lettuce Wraps, paired with Viewpoint Brewing Camero IPA.
  • France: French Onion Short Rib Mini Pies, paired with Paso Point Cabernet Sauvignon.
  • United States: Beef Tallow Brownies, paired with Navigator Dry Creek Valley Zinfandel.

The menu demonstrated how different cuts and preparations of beef can be incorporated into dishes inspired by cuisines around the world. From smoked beef cheek tacos and grilled skirt steak to braised oxtail paella and short rib mini pies, the recipes offered guests a range of flavors, textures, and cooking techniques.

The inclusion of beef tallow brownies also showcased a creative approach to using beef-derived ingredients in a dessert, extending the culinary possibilities beyond traditional savory dishes.

The beverage pairings added another dimension to the dining experience. Carefully selected beers and wines accompanied the recipes, highlighting how food and beverage combinations can enhance the overall meal.

The event’s setting, with sunset views over Mission Bay, provided an informal atmosphere for guests to enjoy the dishes while continuing conversations about food, agriculture, and beef production.

Recipes and Videos Available Online

The California Beef Council has made the complete collection of six recipes available through its official website, CalBeef.org. The collection also includes instructional videos demonstrating how to prepare each dish.

The online resources allow consumers, home cooks, and food enthusiasts to recreate the recipes beyond the event. By pairing written recipes with how-to videos, the CBC is extending the reach of the pop-up experience and providing practical inspiration for preparing beef at home.

The recipe collection also supports the council’s broader efforts to showcase beef in contemporary cooking and introduce audiences to different ways of incorporating it into meals.

Bringing Ranchers and Food Influencers Together

California ranchers also participated in the sunset gathering at Bond’s home, giving attendees additional opportunities to speak directly with people involved in beef production.

These conversations helped connect the ranch visit with the finished dishes served at dinner. While influencers learned about cattle care, herd management, and the use of agricultural byproducts at Flying ‘F’ Ranch, the evening gathering provided an opportunity to discuss how beef reaches consumers and how ranchers contribute to the food supply.

The interaction also benefited ranchers by allowing them to learn more about the consumers, food professionals, and content creators who help shape public conversations about beef.

At the end of the evening, guests received Whitney Bond’s to enjoy on their way home, providing a final culinary touch to the experience.

Van Egmond emphasized that these events create value for everyone involved. Food influencers gain a better understanding of California’s cattle ranchers and beef production, while ranchers gain insight into how their products are used and experienced by consumers.

She also noted that bringing creative food personalities together with high-quality beef, internationally inspired recipes, and complementary beverages creates an environment where engaging social media content and new recipe ideas can emerge.

With the participants collectively reaching approximately 37 million Instagram followers, the Ranch & Restaurant Pop-Up offered the California Beef Council an opportunity to extend its educational message well beyond the people attending in person.

California Beef Council Continues Industry Outreach

The Ranch & Restaurant Pop-Up reflects the California Beef Council’s efforts to connect the state’s beef industry with consumers through retail, foodservice, and influencer marketing initiatives.

By combining an educational ranch visit with a distinctive culinary event, the program presented multiple aspects of beef production, from livestock management and sustainability practices to recipe development and dining experiences.

The event also highlighted the value of collaboration among ranchers, food and beverage businesses, culinary professionals, and digital content creators. Such partnerships can help communicate the role of agriculture in California while giving consumers new ways to learn about the origins of their food.
