According to Barbara Flanagan, President and CEO of Aramark Student Nutrition, the company’s success is built on its ability to combine human-centered insights with smart technology. “Our blend of human insight and smart technology is what sets Aramark apart,” Flanagan said. “We surveyed 50,000 students in the spring of 2025 and paid close attention to every response and data point we received. The findings were then integrated with our nutritional expertise—supported by our vast team of dietitians—and our technological expertise—powered by Culinary Co-Pilot, our proprietary menu AI—to quickly build more enticing, healthier menus.”

By analyzing thousands of student surveys and integrating the results with guidance from registered dietitians, Aramark has developed an enhanced menu strategy that not only meets nutritional guidelines but also aligns with students’ evolving tastes. The company’s Culinary Co-Pilot AI tool enables the rapid development and scaling of student-approved recipes while maintaining compliance with school nutrition regulations.

Proactively Meeting Nutritional Goals

As schools nationwide adopt more stringent nutrition policies and expand free meal programs, Aramark is already ahead of the curve. The company has implemented proactive measures to reduce sodium and added sugars while increasing the use of whole grains and other nutrient-rich ingredients. The 2025–2026 school year will feature an unprecedented variety of limited-time offers (LTOs) and student-approved meals. Aramark has added 250 new recipes to its rotation, bringing more variety and appeal to school menus than ever before. Breakfast and snack programs are also receiving an upgrade through strategic brand partnerships. One notable example is a new whole grain cereal bowl developed in collaboration with General Mills. The product, designed with convenience and nutrition in mind, comes in an all-in-one container that functions equally well as a quick breakfast or an on-the-go snack.

The company is also launching a monthly “Food for Thought” newsletter, designed to keep families informed and engaged. To instill lifelong healthy habits in younger students, Aramark is continuing to grow its ACE Mascot Program. ACE, a friendly fox character, helps students learn about wellness and nutrition in a fun and interactive way. Through live performances, classroom visits, and interactive learning tools, the ACE program teaches “bite-sized” lessons on healthy eating, hydration, and exercise.

Whether through the ACE Show or curriculum-based activities, the mascot-driven approach has proven effective in making nutrition education more engaging and memorable for elementary-aged children.

Prioritizing Food Safety and Allergy Awareness

As student dietary needs become more diverse and food allergies more common, Aramark remains vigilant about food safety and allergen awareness. In response to the growing prevalence of food allergies, celiac disease, and other dietary restrictions, Aramark requires all food service managers to complete the AllerTrain® K12 program—a leading ANAB-accredited food allergy training specifically designed for K–12 food service environments.

With approximately 1 in 13 children affected by food allergies in the U.S., this training equips Aramark staff with the knowledge and skills necessary to prevent cross-contact, identify symptoms of allergic reactions, and implement safe kitchen protocols.
